No-Bake, Mint-Chocolate Cheesecake Cups

Made with a combination of cream cheese and Greek yogurt, these mint-chocolate cheesecake cups offer a lightened-up take on a delicious dessert. Better yet, they’re ready in under 15 minutes and don’t even require the oven.

These mini mint-chocolate cheesecake pots come together in minutes and offer a healthier spin on a mouthwatering dessert.

With Christmas just two weeks away, we’ve been filling our house (and our calenders) with all sorts of festive things. Last weekend we took out the Christmas box and hung the fairy lights. This weekend we have wall-to-wall Christmas parties and the weekend after that, it’s practically Christmas. 

As I reflect on 2019 – it’s been a massive one for us. We’ve moved, married, changed jobs, spent more money on medical procedures than expected, and lost my lovely Grandma, Dorothy. It’s been a year of highs and lows, and as we enter the home stretch, I am very much looking forward to a break.

These mint-chocolate cheesecake cups are rich, velvety and less indulgent than the average cheesecake recipe. Even better – you don’t need to turn on the oven!

Greek Yogurt, Mint-Chocolate Cheesecake Cups

Nevertheless, there’s still a few more weeks of Christmas spirit to be enjoyed, gifts to be given and festive food to be eaten. Feeling inspired by the endless boxes of candy canes at Wholefoods this week, I decided to whip up these Mint-Chocolate Cheesecake Cups. They’re less indulgent than traditional cheesecake but packed with velvety, chocolate goodness.

The best bit of all? These silky cheesecake cups come together in 15 minutes. They look fancy and festive – but only require 6 ingredients and a blender. Like many of you, there are a million and one things on my to-do list at this time of the year – and fast, festive recipes are essential!

Description

Made with a combination of cream cheese and Greek yogurt, these no-bake mint chocolate cheesecake pots offer a lightened-up take on a delicious dessert. Better yet, they’re made with just 6 ingredients and don’t even require the oven.


Ingredients

Units Scale
  • 4oz (112g) cream cheese
  • 1/2 cup brown sugar
  • 1/2 cup + 2 tbsp plain, non-fat Greek yogurt
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp peppermint extract
  • 5 graham crackers or 1/2 cup graham cracker crumbs
  • 2 candy canes (optional)

Instructions

  1. Place the graham crackers in a resealable bag and crush with a rolling pin until the graham crackers become crumbs.
  2. Spoon 1-2 tbsp of graham cracker crumbs into 4 small serving bowls or jars.
  3. Chop the cream cheese into cubes and add the cream cheese to the blender container. Alternatively, you can add the ingredients to a mixing bowl and use a hand mixer to beat the ingredients instead of a blender.
  4. Add the brown sugar, yogurt, cocoa powder, and peppermint extract, to the blender container.
  5. Blend on low-medium speed until the mixture becomes smooth and velvety.
  6. Spoon the chocolate-mint mixture into the serving jars/bowls and refrigerate until serving.
  7. Before serving, crush the candy canes and sprinkle on top of each pot.
