It’s been awhile since my post, but I am so glad to be back on the blog. This little sliver of the internet is my pride and joy, and I truly miss it when the speed of life forces a hiatus.
The last couple of weeks have been filled with fun, friends, plenty of work, and a move! Our air mattress in the living room has been occupied by a rotation of friends and family enjoying summer travel. Our wine glasses have made their way through the dishwasher more times than ever before; and I’ve lost count of the number of cheese boards we’ve consumed at home. Life has been hectic in the most wonderful way.
Yesterday morning I made a smoothie for the first time in a while. Usually I’m hurricaning through the apartment with a piece of avocado toast in my mouth, but yesterday morning I enough time to whip up something in the Vitamix post-run.
I am loving all the summer fruit available at the moment. Every time I step into the produce section of the supermarket I want it all, and subsequently we’ve ended up with a Carmen Miranda fruit bowl, overflowing with nature’s bounty.
This recipe uses some of the leftover white peaches I had lying around, and tastes more like a milkshake than a smoothie. It’s packed with fiber, vitamin C, potassium, calcium, and probiotics which support heart health, immunity, digestion, and bone health. It’s also rich in protein and carbs, which make it perfect for post-workout refueling.
4 pitted dates
1 cup non-fat plain Greek yogurt
1 cup low-fat milk
4 ice cubes
Cinnamon, sprinkle (optional)
Peel the bananas and break them into chunks. Add the bananas to the blender.
Remove the pit from the peaches, and cut the peaches into chunks. Add the peaches to the bananas.
Toss the remaining ingredients into the blender and blend on high until you have a silky-smooth smoothie. Bon appetit!
